Greetings
From Sunny San Diego. Yesterday I was in Junior League heaven with all the ideas, attitudes and fun surrounding all these women. I feel like I've fallen into an Oprah studio audience just sans Oprah! It really has been a rewarding experience but I am starting to miss the fam...
The highlight, I had my picture taken with Marlee Matlin, yesterday's keynote speaker.

tasteful delight
I made this recipe the other night and everyone in my family devoured it - from Josh to Sophia. I'm not the biggest pesto fan but it's really worth a try. And, it's a crock-pot recipe so it couldn't get any better...
Pesto-Stuffed Chicken Breasts
1c. ricotta cheese
1/4 c. Parmesan cheese
1/2 c. pesto sauce
6 chicken breasts (I used about a pound of chicken tenders - I prefer the skinny strips over the hunk of chicken)
salt and pepper
1/2 can cream of mushroom soup - I just noticed it said 1/2, I used the entire can. Whoops.
1/4 c. milk
1/4 c. white wine (I didn't use this since I didn't have any white)
Mix the top 3 ingredients together. Spoon a heaping amount on your chicken breast/tender and rollup. Secure with a toothpick. Season each roll with the salt and pepper then plan in the crockpot. Mix the milk, soup and wine. Pour mixture over the chicken rolls. Cover. Cook on low 4-6 hours or high 3-4 hours.

Gigantic Birdhouse
Josh spent yesterday at the cabin tiling, pretty much the entire first floor, with my parents and brother. One of the countless times they walked in and out of the front to cut a piece of tile, a baby bird flew in. My mom ended up propping open the front door in hopes that it would find it's way outside and went on their way. Hours later, no sign of the bird, they start to clean up and prepare to leave for dinner. Somehow, someway, Josh spots this bird in the basement rafters. So, he lifts OUR 3 yr old up to look first hand. Yes, he puts HER FACE inches away from this infant bird, scared silly, just so she could have a closer look. AHHH!
Anyway, he then proceeds to catch this bird with his hand. Yes, he does indeed have lightening speed reflexes... We take a few pictures and he sets it free. Ahhh, the trials and tribulations of a days work at the cabin.
someone needs a shower...

cheerio love
The connection between Sophia and Jude has been present since birth but the cheerio rapport just blossomed Monday night at swimming. Jude surrendered cheerios to Sophia one by one while sitting in his stroller, personally feeding her from his cheerio stash. Today, I was hoping for the same tenderness and affection from my sweet girl since the roles were reversed - she was in the stroller with the cheerio stash...

Carnie Lovers
Saturday kicked off the first official carnival for the season. I think we hit 4 carnivals last year and we're hoping to supersede that by 2 more this year. My kid loves the carnival SO much that we spent 30 minutes yesterday, sitting in our car, watching the workers breakdown the equipment. She personally said goodbye to every horse on the carousal as they loaded them in the truck.

tulip fest
Saturday, just "the girls" visited the Tulip Festivial sans the tulips. Say LOVED the train ride and Sophia LOVED the animals.
